What you gonna eat Wednesday...

Today with it being technically summer although in reality the calendar says July it is only 71 degrees out as I write this blog post. So, to have us think of summer again I have decided to bake this cookie today and try to trick Mother Nature or my families brains... here you have it, strawberry cookies. mmm mmm good. I made these for 4th of July too to go with the whole red, white and blue theme. 

Strawberry Cake Mix Cookies
One box of Strawberry Cake Mix
1 egg, slightly beaten
One 8 oz tub of Cool Whip
 2 cups confectioner's sugar (for powdering the cookies after baked)

Combine all ingredients with a mixer (except Powdered sugar)  Now you can drop tablespoonfuls into powdered (confectioner's) sugar before baking.   
Bake at 350 for approximately 10 minutes. Check cookies, at about 8 minutes. You don't want them to be crisp, just chewy. Lightly browned around the edges.

Let cool, but when still slightly warm drop into powdered sugar to coat and then place back on cooling rack.
